That all sounds interesting and useful.

If you decide at any time that you would like to contribute your
teaching materials to the freepoplog site, or would like to set up
your own web site with a link from the freepoplog site, I'll be happy to
do what's necessary.

If there are good student projects that can be used as examples, it may
be worth saving them if they are implemented in a 'portable' manner
(for which the 'compilehere' construct is often useful, explained in
    http://www.cs.bham.ac.uk/research/poplog/help/compilehere
).

I have added some student projects to the SimAgent package, for
instance. Some examples are demonstrated here:
